I also love the brightness of these photos since this dish is for breakfast. It looks like you are! I love my newfound free time! What kind of quinoa have you tried? It seems like the red kind pictured has a more nutty flavor, which lends itself well to breakfast foods.
Thanks for the ideas. I always cook a big batch of quinoa, and then vacuum seal it 2 cups at a time. Stove works just as well, and better texture. Oh, regarding crumpets: in Seattle we do!

Previously, my quinoa always turned out dry, and generally unappetizing. Now, however, it is fluffy and delicious as can be! Definitely adding this to my breakfast list from now on. Your breakfast solution caught my eye.
Thanks for the new breakfast idea! Oh my goodness that was delicious! It is winter where I am writing and thanks to you I may have found the perfect breakfast for this season! I cooked red quinoa last night and had it today with some soymilk, banana and tahini, seriously amazing. This was great! This has been my breakfast for the past 3 mornings. The toasted almonds and coconut really elevate this dish.
My favorite so far is 1 mashed banana, topped with fresh blueberries, and coconut milk. I reduced the milk to a quarter cup, better still since coconut milk can be high in calories. Change it up: Try honey instead of maple syrup, use your favorite nuts or seeds, toast unsweetened shredded or flaked coconut with the nuts, top with fresh fruit or instead of dried, add a big dollop of applesauce, etc.

Looking at your serving suggestions reminded me of a quinoa breakfast parfait recipe my husband got out of the newspaper. I like the idea using your flavors layered with yogurt, as a way to up the protein level of the breakfast. Definitely want to try this. The parfait worked out wonderfully. I like what the yogurt does for the flavor and the texture. This recipe is definitely a keeper, especially since I always have the ingredients on hand.

I popped it in the microwave to thaw for a few seconds, but I probably could have skipped this step. I used pecans, walnuts, unsweetened coconut flakes and the maple syrup. I topped it with dried cherries.
